Ambassador Khalil Hashmi wrapped up his visit to Gansu yesterday. Besides the very productive meetings and the support extended by the local authorities, authentic Lanzhou beef noodles remain one of the most pronounced memories of his visit. Nothing grounds a traveler in Gansu like a bowl of these noodles - hand-pulled with mathematical precision, clear broth, varying noodle widths, and a rhythm that’s been perfected for centuries. These noodles and Lanzhou cuisine are also symbolic of China’s expansive Halal food market.
